BROCCOLI AVOCADO SOUP

This recipe is so versatile, it can be easily customized to your personal taste. Love coriander? Throw some in… Feel free to play around with this one until you figure out your personal best version.
Serves 4 cups l Prep time: 10min

Ingredients:

1 packets frozen broccoli (12 oz) (2 cups)

1 cup Chicken Bone Broth (or Beef)* juice

½ lemon 1 cup shredded cheddar cheese

50g avocado (approx. ½ med) OR heavy cream ½ cup + ¼ cup butter

*1 cup hot water + Salt to taste

Instructions:

Steam or boil broccoli until just cooked (still bright green) – approx. 5-6 minutes.

Drain and then transfer to a blender. Add the bone broth, lemon juice, shredded cheddar cheese and avocado OR heavy cream/ butter if using that instead.

Whizz in blender until pureed and serve immediately with your favorite keto-friendly toppings; we like sour cream and bacon bits on ours!

Variations: this recipe is so versatile, it can be easily customized to your personal taste. Love coriander? Throw some fresh leaves in… How about ginger? Garlic? Onion? Even mustard powder! Feel free to play around with this one until you figure out your personal best version.
