Ingredients
Crust
2 cups almond flour
1/2 cup melted butter
1/4 cup The Keto Food Co Sweetener
Lemon filling
1/4 cup melted butter
1/2 cup fresh lemon juice
1/2 cup The Keto Food Co Sweetener
6 whole eggs
1 cup almond flour
Step 1 Preheat oven to 180 degrees, and line a 8x8 pan with parchment paper.
Step 2 In a bowl combine almond flour melted butter and sweetener which should form a dough like mixture. Then line the pan with dough as the base.
Step 3 Bake the crust for 7 minutes until golden brown, while it’s baking start with lemon filling.
Step 4 In another bowl mix softened butter, lemon juice, and sweetener until smooth, then add in the eggs and mix well before then adding almond flour.
Step 5 Take the crust out the oven and then pour the lemon filling over it evenly and smoothen it out.
Step 6 Bake for 20 minutes until the lemon topping stops giggling and is firm, to make sure it’s firm enough use a toothpick to check.
Step 7 Once it’s complete chill for an hour and serve with lemon zest and keto food co collagen cream, last up to 2 weeks in fridge
